How do cafes calculate matcha cost per cup?
Use the formula: matcha grams per cup divided by 1000, multiplied by the matcha price per kg. Then add milk, cup, lid, labor or waste assumptions to estimate the finished beverage cost.
Why can a higher kg price still be cheaper per drink?
A stronger powder may work at a lower dosage. If a lower-priced powder needs twice as many grams to show enough color and taste, its finished cup cost can be higher.
Worked example
How the number actually comes out
Cup cost is dominated by dosage, not by the price per kilogram. A powder that costs more per kilo but works at a lower dose can be cheaper per cup than a bargain lot you have to overdose to get colour.
Fix the dose in grams. A standard cafe latte typically sits between 2 g and 4 g depending on cup size and how green the drink needs to look.
Divide 1000 by your dose to get cups per kilogram. At 3 g that is roughly 333 cups; at 2 g it is 500; at 4 g it is 250.
Divide your landed price per kilogram by cups per kilogram. That is matcha cost per cup, before milk, cup, lid, and labour.
Add the rest of the build. In most cafe programmes milk is a comparable line item to the matcha itself, so a matcha-only comparison misleads.
Include waste. Sifting loss, spillage, and drinks remade because the colour looked wrong all belong in the real number.
Re-run at your actual volume. Landed cost per kilogram changes with order size, packaging format, and freight route.
